This is the partner to KoraiShuti'r Kochori - Aloo'r Domm, Sweet & Spicy Potato Stir-fry. There are many versions of it. But this is the one to have with Kochori. I'd rather have it separately with some butter soaked and layered crispy flour paratha. But then again if I had that kind of paratha I'd rather have that with spicy meat curry. Since I had none of that, I settled for the kochori. But then ... never mind, it is getting confusing. The food is just so mouth watering that it's reminding me of other mouth watering dishes. Let me just focus on this potato that we polished off with the kochori last night.

 

Utensil/ Appliance

A medium size frying pan

Ingredients

Potato: 500g small potato boiled & peeled.

Spices: 1/2 tsp cumin seeds + 1 inch cinnamon + 2 cardamom + 4 cloves + 1 bayleaf

Spice paste: 1 inch ginger + 1 tsp cumin seeds, made into paste + 1 tsp coriander powder + 1/2 tsp turmeric powder + 1/2 tsp salt + 1 tsp water

Sugar: 1/2 tsp

Tomato: 2 grated

Mustard oil: 1 tbsp

Salt to taste

Method

In the frying pan heat the oil. Add the potatoes and salt and stir fry till golden. Take out and keep aside. In the same oil add the whole spices and fry for 30 seconds or till fragrant. Add the spice paste and 1/2 tsp sugar and stir fry for another minute. Next add the grated tomato and fry till oil separates. Add the potatoes back and mix well. Cover and cook for 3 minutes, if necessary add 1 tbsp of water. Stir occasionally to make sure the spices don't burn. Turn out into a serving plate garnished with coriander leaves and green chilli. Serve hot with Kochori. If you like it spicy hot, add red chilli powder in the spice paste mix.
