My grill is out and burning every evening. The weather has been such. Sitting next to hot burning coal gives you a comfort in this chilling weather that the best heaters in the room can't. Well for one it doesn't cook the sumptuous shish kebabs. You got to sit next to the grill and eat it hot and burning.

Utensil/ Appliance

Charcoal grill/ oven preheated at 200ÂșC


Chicken: 450g boneless chicken breast cut into 1 1/2 inch cubes

Green pepper: 1 large, seeded and cut into squares

Yellow pepper: 1 large, seeded and cut into squares

Baby onions: 8 nos halvedIMG_6185

Button mushrooms: 225 g whole, washed

Tomatoes: 4 nos halved

Butter: 1 tbsp melted (or more, more the merrier)

For the marinade: 3 tbsp olive oil + juice of 1 lemon + 2 garlic cloves crushed + 1 large onion grated + 1 tbsp fresh oregano chopped + salt & freshly ground black pepper


Mix all the ingredients for the marinade in a bowl. Put the chicken in a shallow bowl and pour the marinade over the chicken, mix and cover with a cling film and leave for 2 hours at least to marinate.IMG_6277 Thread the chicken andvegetables alternatively in skewers. Once all of it is ready, grill on a charcoal grill for about 15 minutes, basting with butter intermittently. Serve with Pita or naan. This is how we ushered in the new year. The pleasantly unfamiliar combination of grated onion, olive oil and lemon was a new discovery.
