Honestly, I don’t pay much attention to salad when I have people over for dinner. There are usually lot of proteins and some more. I take lot of care in adding couple of vegetable dishes and the salad is just something tossed together – because it’s presence is like having my 90 year old nani at all the parties. So, this one time I was invited to a friend for lunch and to my surprise and a little bit of green monster lurking some where in my head, there were three different salads, and each of them were like meals by themselves. For the first ten minutes I thought she was going to serve that as the main course. But each of them was different in texture and colors and made by stuff and combinations that I never could have imagined. I had to toss my toss salad out the window. I had vowed to pay more attention to salads since then, which I had forgotten. Half the time at parties I find my salad lying in the fridge nicely covered in cling film after all the guests are gone. When I had been wandering around the whole time with sickly feeling that something was amiss.

This is a simple 5 minutes salad which can be whipped up and make the second or third salad at your dinner table or replace the cut salads which adorn it everyday.

Utensil/ Appliance

Ingredients

  • Cucumber: 1 medium size evenly sliced. You can keep or remove the skin as you like.
  • Curd: 1/2 cup
  • Vinegar: 2 tsp, Balsamic
  • Sugar: 2 tsp powdered sugar
  • Coriander leaves: 1 tsp finely chopped
  • Peanuts: 1 tbsp roughly chopped

Method

Beat the curd till smooth. Mix all the ingredients except nuts and cucumber. Layer the cucumbers on the serving plate and pour the dressing on top and sprinkle the peanuts. Like for any salad, prepare the dressing ahead and pour it over right before serving.
