My favorite kind of egg preparation for breakfast especially at hotels is Masala Omlette. This is an attempt to recreate and loved it.

Utensil/ Appliance

Small frying pan


  • Eggs: 2
  • Mushroom: 1 large quartered
  • Spring onion: 1 roughly chopped
  • Tomato: 1 small quartered
  • Green chili: 1 finely chopped
  • Coriander leaves: 1 tbsp
  • Oil: 1 tsp
  • Salt to taste


Put all the ingredient in the food processor and process for a few seconds to finely chop and mix all the ingredients. Take out in a bowl add the two eggs and sprinkle salt and whisk ti mix well. In the frying pan heat the boil and add the egg mix sprinkled with green chillies. Cover and cook in low heat for five minutes, turn off the heat and rest for another minute. Serve hot garnished with some finely sliced onion leaves and tomato and buttered toast.
