I have not travelled much physically but I did travel a more cuisine-wise. Middle Eastern cuisine is one of my favorite. I love the flavor, taste, smell, looks, ingredients. There is something mystical about it for me. Today is Orange & Date Salad. Though it’s called a salad I served it and had it as dessert. It’s a Moroccan dish essentially. We had a small dinner party, and I love the fact that I can experiment and try out dishes. I am not sure whether my guests are as excited but they are brave enough. I love oranges and this is so beautiful to look at. The icing on the cake was, a very good friend came visiting from the Middle East with fresh-plucked dates from her garden. How cool is that? A middle Eastern food cooked with ingredients fresh from the land.

Utensil/ Appliance

Ingredients

  • Orange: 6, peeled
  • Rose water: 2 tbsp
  • Lemon juice: 1 tbsp
  • Dates: 115 g stoned and chopped
  • Pistachio nuts: 50 g chopped
  • Icing sugar; to taste
  • Almonds: few toasted

Method

With a very sharp knife cut out the all the pith and cut the oranges in sections. Importance of sharp knife cannot be stressed enough here. If you don’t have one which will cut orange like butter, then don’t make it. If you had no reason to get a very sharp knife, then this is it. Go get one now! While you cut the sections some juice will come out, collect them in a bowl. Place the orange sections in a serving bowl. Mix the rose water and lemon juice with the orange juice and pour over the orange. Sprinkle the pistachio, dates and some icing sugar cover, mix a little and chill for an hour. Before serving sprinkle the toasted almonds and little more icing sugar.
