About two years back when we were in Mumbai, I met few moms who liked whipping up pasta for dinner or anytime to kids. In school also, pasta was on the top of the list for party meals. I hated it. I used to think that it was a shortcut of the worst kind to serve kids as  meal. Boil and mix with a store bought pasta sauce, and your meal is ready, it's a miracle food for busy moms. My kids initially didn't like it, but there were no other food at parties. So they eventually warmed up to it so much that they started signing up for it in school. So I had no choice but to make a "Jain" pasta for school party one time. Oh boy did that wreck me! That broke me and I gave in to the pressure of the Pasta. But always still hated the idea of store-bought sauce. I do always have one bottle in my fridge always, but I prefer making the sauce myself. And I know why one would choose that, so here is a very very simple pasta with home-made sauce - that too instant.

Utensil/ Appliance

A Large non-stick pan


Dried pasta: 150g tagliatelle or spaghetti or linguine

Olive oil: 1 tbsp

Bacon rashers: 50 g chopped finely

Garlic cloves: 1 crushed

Eggs: 2

Parmesan cheese: 20g grated

Pecorino cheese: 20g grated

Freshly ground black pepper to taste


Cook the pasta as per the instruction on the packet. In the frying pan, heat the oil and fry the bacon rashers and the garlic till they turn dark brown and crispy. Beat the eggs and 2/3 rd of the cheese together and season with pepper, leave aside. Add the pasta and the egg mix to the pan and mix well to coat the pasta with the egg mixture. Serve hot, sprinkled with the remaining cheese and pepper.
