I wanted to make this dish forever. I have a small Chinese cook book, an Australian publication, picked up many many years ago. It doesn't have the cover anymore. I have gone through the pages more times than I cooked from it. The pictures are very attractive but the recipe's a little complicated. But this one is very simple. The reason it took me such a long time is that I have been waiting for the perfect celery. It is difficult to find good juicy celery where I live. Finally I got some, though they were not the perfect but good enough to cook with them. Even with all the waiting I did not have too much expectation. But it surprised me. So I would recommend that you must try it.


Utensil/ Appliance

A small sauce pan


Chicken breast: 1 whole

Celery: 1 stick cut into thick diagonal slices

Sesame seeds: 1/2 tbsp toasted golden

Five spice powder: 1 pinch

Soy sauce: 1 tsp

Ground ginger: 1 pinch

Dressing: 1 tsp sesame oil + 1 tsp soy sauce + 1 tbsp oil


In the sauce pan, place the chicken breast, cover it with water, add five spice powder and soy sauce. Bring to boil slowly, simmer under cover until chicken is cooked. Leave the chicken in the stock to cool. Drain it and reserve the stock for the celery. Cut the chicken into slices and keep aside. Put the chicken stock back on the stove and bring to boil. Add the celery, boil for a minute and drain. Reserve the stock for another recipe if you like. Dry out the celery by squeezing it gently on clean kitchen towel. In a bowl mix the dressing ingredients along with ginger, add the chicken and celery and mix well. Transfer to a serving bowl and serve sprinkled with sesame seeds. Serve cold.
