This is desert from Africa. Not sure from where exactly. The recipe is from my favorite  "The Round the World Cookbook". The section on African cuisine is dominated with 'banana' as the main ingredient. I do find it strange that such a huge continents cuisine can be summarized within few pages. But it was good enough to get me started on it. Simple, quick desert, a change from a store bought sweet. I like banana but find it heavy, but this desert was just what I needed with the dollop of whipped cream.

Utensil/ Appliance

Oven preheated @ 200ºC

Ingredients

Banana: 6 ripe but firm bananas sliced diagonally

Nuts: 2 tbsp unsalted cashew nuts chopped + 2 tbsp unsalted chopped peanuts

Coconut: 2 tbsp desiccated

Demerara sugar: 1 tbsp

Cinnamon: 1 tsp ground

Nutmeg: 1/2 tsp freshly grated

Orange juice: 2/3 cup

Method

Grease a shallow ovenproof dish, place the banana slices in it. Mix rest of the ingredients except for the butter, orange juice and rum in a bowl and keep aside. Pour the orange juice and rum over the bananas and then sprinkle with the mixture. Sprinkle the melted butter over and bake in the oven for 20 minutes or till the sauce is bubbly. Serve warm with the whipped cream or vanilla ice-cream.
