Arhar / tuwar/ harhar / yellow lentil is one of the most common and favorite dal at our home. To be precise my husbands. It is cooked quite often. Though I know my husband would love to have it the way he loves it day in day out but it tires me out. I may love him a lot, but not the dal as much (lucky for him). I need to bring variety in the tadka. Hmmm… lesson in marriage - 'Change the ‘tadka” not the dal!’ Bad joke. Anyway, I found the tadka a good one to keep in the recipe collection so here goes.
Arhar Dal: 1 cup, washed and soaked for 30 min
Tomatoes: 2 medium size grated + 1 roasted, peeled and cut into cubes
Turmeric powder: 1/4 tsp
Salt to taste
Ginger: 2 tsp finely chopped (you can use less if you like, it gives a strong ginger flavor)
Coriander leaves: 2 tbsp copped
Water: 2 1/2 cup
For tadka: 1 tbsp ghee + 1 pinch asafoetida + tsp cumin seeds + 1/2 tsp red chilli pwd
Pressure cook the dal with the water, salt & turmeric to one whistle. Then cook for 4 min in simmer and turn off the heat. Open the lid and put it back on fire. Add the rest of the ingredients and bring to boil. In the meanwhile prepare the tadka. It's quick swift act so have everything ready. Transfer the dal to a serving dish. Heat the ghee, then asafetida, then cumin and last the red chilli powder. As the tadka crackles and sizzles with your swirl pour it over the dal. Mix lightly and serve.
