There is a rule at my home about meals – whatever is at the table one has to eat. No choice no customisation. That’s the only reason I can cook at my will. Well I am not such a monster, I do cook favourites in turn, so that everyone is happy in the long run. Sunday morning breakfast, served at 10:30 am, very late by our standards and on top this Tortilla. It’s called Tortilla, but looks nothing like the one I thought I knew. So I looked up and it turns out that it’s actually the Spanish Omelette which is made with potatoes and eggs. But the mystery of the Tortilla name remains unresolved for me. This is a variation of the Tortilla the Spanish Omelette with peas, broccoli and I took the liberty of adding sausages.

I did end up with comments like “I thought something tasty was being cooked” and then some more – “I am not eating this”. But ha ha I say to that. Everybody knows the rule, some grated cheese on top and it all went down happily in minutes. I was happy as it was a pretty healthy breakfast and my kids eventually warmed up to the taste.

Utensil/ Appliance

a large flat pan and a small sauce pan

Ingredients

Eggs: 6

Peas: 115g 

Broccoli: 115 g cut into small florets

Sausages: 2 cut into slices

Olive oil: 3 tbsp

Potato: 350g

Onions: 2 small finely chopped

Salt & pepper to taste

Method

Half cook the potatoes in microwave for 2 1/2 minutes. this will cut down on cooking time. Then peel and cut them into 1/2 inch cubes. In the frying pan heat 1 tbsp oil and fry the potatoes and onions stirring occasionally till potatoes are soft. In the meantime, bring water to boil with salt in the saucepan and boil the broccoli for 4 minutes, strain and keep aside. In the same water boil the peas for 4 minutes, strain and keep aside. In a bowl whisk all the eggs, add 1/2 tsp salt and pepper to taste. then add all the ingredients to the eggs and mix well. Heat the rest of the oil in the large frying pan again and pour the eggs mixture in it. Level the surface with the ladle and cover and cook in simmer for 10 minutes. Turn over the omelette on a plate and slide it back and cook farther 5 minutes on the other side. Serve hot or cold. Makes a complete breakfast omelette.
